How to store beets:

  • Store beets in refrigerator for 3-4 weeks or more. If cooked, store beets in a closed container in the fridge for up to a week.

Beet tips:

  • Cut off beet greens when you store beets.
  • Beet greens are healthy and nutritious. Cook like spinach.
  • Roast beets with peels on, in foil. After roasting, scrape peels off gently with a spoon.
  • Try boiling your beets for 15-30 minutes or until fork tender.

Roasted Beet Salad

This roasted beet recipe is a delicious addition to any dinner. Try the beets by themselves or add to them to a crisp, green salad. 

  • 3 small beets
  • 2-3 Tbl favorite vinaigrette dressing
  1. Preheat oven to 425°.
  2. Scrub beets and place beets in center of a large piece of aluminum foil. If beets are extra large, cut in quarters.
  3. Wrap foil around the beets to create a sealed pouch.
  4. Place beets in oven. Small beets: 20-30 minutes. Medium beets: 30-40 minutes. Large beets: 40-50 minutes. The beets are done when they are fork tender.
  5. Remove from oven and allow to cool.
  6. Cut away ends of beets and easily remove skins by scraping with spoon.
  7. Cut into bite-sized pieces and toss in your favorite salad dressing. Serve with your favorite protein!

Makes 2 servings

Microwave Instructions:

  1. Peel beets and place in a microwave-safe bowl with 1 inch of water.
  2. Cook for 2-4 minutes per beet. Check for doneness with a fork.

These home fries are quite delicious with a fried egg on top!

  • 3 beets, peeled and cut into 1/4-inch cubes *
  • 1 medium onion, chopped
  • 2 carrots, peeled and shredded
  • 1 cup broccoli, cut into small pieces
  • 3 Tbl oil
  • 1/2 tsp salt
  • Black pepper to taste
  • 1/4 tsp thyme

*Can substitute drained, canned beets. Canned beets need to cook for only 3-5 minutes.

  1. Heat large frying pan over medium-high heat. Add oil and heat briefly. Add black pepper and beets. Cook, stirring occasionally for 8-10 minutes, until the beets start to soften.
  2. Add onion and salt. Cook, stirring frequently, for 3-5 minutes, or until the onion softens and starts to turn brown around the edges.
  3. Add carrots, broccoli, and thyme. Cook for 5-7 minutes, stirring frequently, until the broccoli softens and beets can be easily pierced with a fork.
